Chocolate chip cookie is a cookie that originated in the United States. Chocolate chip cookie was invented by Ruth Graves Wakefield who owned the Toll House Inn in Massachusetts, a very famous restaurant. She had been serving butterscotch cookie and was trying to make something different. She had been making chocolate cookies and on running out of regular baker's chocolate, substituted broken pieces of semi-sweet chocolate from Nestle thinking they would melt and mix into the batter but they did not and the chocolate chip cookie was born.
Next, english muffin is a flat, round type of yeast-leavened bread which is commonly sliced horizontally, toasted and buttered. In a mixing bowl, combine bread flour, yeast and milk. Stir well with wooden spoon and put aside for 15-20 minutes. In another mixing bowl, combine plain flour, sugar and salt and mix them well and make a well in the centre. Then, add in the sponge dough and melted butter. Knead them until combined.Then form them into balls. Place in a grease paper, cover and let rise in a warm place or proofer until doubled (about 1 hour). Plop the dough out on a floured work surface. Gently push it down into a circular shape. Cut with 3" cookie cutter. Then sprinkle lightly baking tray with corn meal and place the cut muffins, cover and proof for 30 minutes. Before cooking, sprinkle top with corn meal, grease skillet lightly with oil then heat up to medium heat and start cooking. Cook for 2-5 minutes on each side. Then, transfer the cooked muffins to a cooling rack and wait until they are cool and now your english muffins are ready to be served! You can eat them with butter, jam or cream but during our class, we ate them with jam.
These are the cookies and english muffins. The english muffin can be eaten with jam. Very yummy!!
